// NEW YORK CITY // COBBLE HILL, CROWN HEIGHTS, GRAND CENTRAL //
a fully-baked everyday boulangerie
Bien Cuit is a working boulangerie. A bakery in a traditional, European sense. A utility (though priced at NYC prices). Counters filled with bread, viennoiseries, pastries and provisions. The smell of bread and warmth from the ovens in the back. A utilitarian sensibility to the simple space: clean branding without a focus on style. And importantly, generous hours so that you can actually pick up bread for dinner. A quick in-and-out affair without lines or specialty drinks or any of the frills that the bakery scene in this city seems overladen with these days.
Bien Cuit has withstood the test of time. James Beard finalist Zachary Golper first opened the Smith Street bakery back in 2011 in a very different food landscape. True to its name, this bakery is about the substance: the bake of the product. The bread is reliably good, and the pastries hold up, with a solid balance of sweet and savory options, traditional forms and more creative seasonal flavors. And sandwiches for an easy lunch.
Perhaps because of its age, Bien Cuit has faded in to the background of the bakery scene. I imagine there was a time it was the buzzy bakery on the block. But that was before the days of Instagram food bloggers and Tiktokers and lines around the block. In a way, it’s a bakery with New York sensibilities: it’s efficient as a stop on an errand run, a quick swing by on the way to a dinner party or a picnic, or a quick coffee and croissant before a train ride in Grand Central. And amid the line and reservation culture plaguing the city these days, there’s something extra special about the workhorse bakery from a simpler generation.
