Paloma started off as a little pandemic cafe in Greenpoint with a line of signature and single origin coffee beans that are locally roasted and sold wholesale and direct to consumer. The cafe serves the brews, of course, alongside an impressive pastry spread. So impressive in fact that it has put Paloma on the map as one of the most innovative bakeries in the thriving Brooklyn bakery scene.
Among great company with popular bakeries that draw lines around the block, Paloma is refreshingly still under the radar. The pastries draw inspiration from flavors around the world and feature seasonal produce, often in unique combinations that you might not find anywhere else. And very well balanced between sweet and savory. Think chorizo and black bean paste in a croissant, a danish with pink guava and grapefruit topped with vanilla cream, matcha terrine croissants (featuring Kettl matcha), a calamansi curd filled pastry knot, a mortadella pistachio croissant, and an artful creation of a croissant cone filled with verbena peach ice cream and poached peaches. Just to rattle off a few recent creations. Which means, while coffee may have been the core product, for our intents and purposes, Paloma is a bakery, one that can take any flavors and transform it into a beautifully laminated pastry.

Order this: literally any of their laminated pastries, a seasonal savory galette or perhaps a slice of spanish tortilla for more of a meal
Amount of time to spend: 10 minutes for takeaway, 30 minutes to stay, but they have limited seating
When to come: mornings for a wider pastry selection, and avoid weekends for the crowds, but otherwise any time is a good time
Getting here: Greenpoint locations are all a short walk from the Nassau station (G), Williamsburg is just down the street from the Metropolitan/Lorimer station (G, L) and also a short walk from the Hewes station (J, M)
