There are many cheffy restaurants in Copenhagen that are driven by creativity. But I would assume that few are quite as unique and whimsical in culinary creativity as Baka d’Busk. It fits with the neighborhood vibe of youthful creatives and “hipsters” if that’s even a descriptor these days.
As soon as you step in, you are immersed into the world of Baka d’Busk. Colorful, energetic. Filled with art and trinkets to capture your gaze wherever you look. Plants hanging, glass stained. Mismatched furniture and colorful lights. You forget about the outside world.
As for the food, it’s a little bit of everything. Colorful, fresh, rich, briny, creamy, herbaceous, cold, hot, crunchy, tender, sweet, salty, citrusy, bright. From pickled vegetables dipped in vodka to beets stewed with sweet onions to blood oranges and fennel. The dishes show the breadth of what vegetables and fruits can do, each dish standing out unique to the next and presented with a casual flair. It’s a meal that defies labels, standing out even in a city of excellent restaurants.
